Italian Sweet Pie

Ingredients
1 ½ lbs. ricotta cheese
2 cups uncooked grain
1 ½ dozen eggs
2 cups sugar
1 shot glass each of: anisette, strega, rum and brandy
Rind of 1 lemon and 1 orange
candied cherries and pineapple (optional)
pie crust for 3 pies
Directions
Cook grain with pinch of salt, orange and lemon rind until white and tender. Add sugar to grain while still warm. Let grain cool-mix other ingredients. Bake 300’ approx. for 2 hours in a large glass baking dish with crust or makes 3 pies. An Easter favorite.
